Masala Chai

🧾 Ingredients:

  • 1½ cups water

  • 2 tea bags or loose-leaf tea

  • Fresh ginger (½ inch, chopped or grated)

  • 4 green cardamom pods

  • ½ tsp fennel seeds

  • 2 peppercorns

  • Chai masala (store-bought is absolutely fine)

  • Sugar or jaggery, to taste

  • ½ cup milk of choice

🥄 Method:

  1. Start the brew
    Heat the water in a saucepan and add:

    • Tea

    • Ginger

    • Cardamom pods

    • Fennel seeds

    • Peppercorns

    • A pinch of chai masala

  2. Bring to life
    Let everything come to a rolling boil — your kitchen should start smelling incredible.

  3. Sweeten & soften
    Add sugar or jaggery, followed by the milk of your choice.

  4. Simmer
    Bring back to the boil, then simmer gently for 2 minutes.

  5. Strain & serve
    Pour into your favourite cup and enjoy
